The Grimoire: All-Purpose Southern BBQ Chicken with Real Southern Spice
Spellbinding wings and all other things.
Created by versatile red mages, Real Southern Spice is the rub you reach for when you can't decide. A smoky, paprika-led all-rounder with a little southern sweetness, it's as happy on a tray of wings as it is on a whole roast chicken or a rack of ribs.
What you'll need
- 1 kg chicken wings or thighs (or a whole chicken, jointed)
- 1–2 tbsp oil
- Real Southern Spice, generously
The method
- Pat the chicken dry and toss with a little oil.
- Coat generously with Real Southern Spice, working it into every nook. Leave 30 minutes, or overnight for deeper flavour.
- Roast at 200°C fan, or grill over indirect heat, turning occasionally, for 35–45 minutes until cooked through and caramelised.
- Because of the sugar in the blend, keep wings away from direct flame near the end so they catch colour without burning.
Sage's tips
- The all-purpose nature is the point: try it on pork chops, halloumi or roasted cauliflower.
- For sticky wings, brush with a little BBQ sauce in the last 5 minutes.
