The Grimoire: Dragonfire Wings with Dragon Dust
Devastatingly spicy. Try if you dare.
Sourced from the ashes of a fire drake, Dragon Dust is the hottest blend in the grimoire, a searing, herby, Scotch-Bonnet-and-Szechuan heat that's not for the faint-hearted. Use with respect. Serve with a glass of milk nearby.
What you'll need
- 1 kg chicken wings (or any meat brave enough)
- 1 tbsp oil
- Dragon Dust, to your tolerance
- A cooling yoghurt or blue-cheese dip
The method
- Toss the wings in oil.
- Dust with Dragon Dust, starting with less than you think you need. You can always add more; you can't take it back.
- Roast at 200°C fan for 35–40 minutes, or grill until cooked through and crisp.
- Serve with a cooling dip and something cold to drink.
Sage's tips
- A little goes a long way. Blend it half-and-half with Real Southern Spice for a more manageable, smoky heat.
- Wash your hands before touching your eyes. Dragon's fire lingers.
