The Grimoire: The Summoners Spice Bag
Sprinkle and shake for a serious bag 'o' scran.
This is our salt-and-chilli spice-bag blend, Chinese 5-spice, Szechuan pepper and a proper hit of chilli, built to recreate the takeaway classic at home. And yes, this one's got MSG. We know. Most of the grimoire is no-MSG, but the spice bag is the one occasion where the magic gets a little backup.
What you'll need
- 600 g chicken tenders or popcorn chicken
- A batch of hot chips
- 1 onion, sliced; 1 red chilli, sliced; spring onions, chopped
- Summoners Spice Bag
- A large bowl or bag with a lid
The method
- Cook the chicken and chips until golden and crisp (deep-fried or air-fried).
- Tip them, hot, into a big bowl or bag with the sliced onion, chilli and spring onion.
- Sprinkle Summoners Spice Bag generously over the top.
- Cover and shake until everything is coated and glistening. Tip out and scran on, immediately.
Sage's tips
- The shake is the ritual. Do it while everything's piping hot so the seasoning clings.
- Works on tofu, prawns or halloumi just as well as chicken.
