The Grimoire: Yggdrasil Roast Potatoes & Lamb with Hommodis Herb
Punchy, earthy and fragrant, from the mythical tree of life.
Hommodis Herb is the grimoire's all-rounder: a rosemary-and-thyme-led herb blend that loves potatoes, lamb and even beef in equal measure. Roughly translated from Yggdrasil itself, it brings a fragrant, earthy depth to a Sunday roast.
What you'll need
- 1 kg potatoes, peeled and quartered
- A lamb leg or shoulder (or a few lamb chops)
- 2–3 tbsp olive oil or butter, melted
- Hommodis Herb, generously
The method
- Par-boil the potatoes 8 minutes, drain and steam-dry.
- Rub the lamb all over with oil and a heavy coat of Hommodis Herb. For a joint, rest it seasoned for an hour at room temperature first.
- Toss the potatoes in melted butter or oil and dust with more Hommodis Herb.
- Roast the lamb to your liking (around 20 min per 500 g at 180°C fan for medium), adding the potatoes around it for the last 45 minutes so they soak up the juices.
- Rest the lamb 15 minutes before carving.
Sage's tips
- Mix a spoonful into softened butter and melt it over the carved lamb for a fragrant finishing gloss.
- Equally good stirred through a warm potato salad.
